Apricot & Coconut Fruit Leather

Ingredients: 400gm of canned/fresh apricots Shredded Coconut Instructions: 1. Blend Apricots in your favourite blender, use a little water to make it into an appropriate consistency for pouring; you want to aim for 3-4mm thickness when on the solid sheet that comes with your dehydrator. 2. Once you have found the desired consistency, simply pour on to the solid sheet and lightly sprinkle coconut over the blended apricots. 3. Set the temperature at any of the three options below... - Option 1. Set at 65°C for 4 – 6 hours. - Option 2. Set at 57°C for 6 - 10 hours (check for desired consistency) - Option 3. Alternatively, you can dehydrate on a lower temperature of 55°C for 10 – 12 hours. 4. When the fruit leather has dried, it will be a bit shiny and non-sticky to touch. 5. Allow it to cool and peel it from the tray. Roll into a tight cylindrical shape and store in an airtight container. Tip: Pour in a large circle, and smooth inwards to centre - this will ensure the edges are slightly thicker than middle for more even drying.
